Primarily used as a food preservative, it is also employed in cosmetic preservation and feed mold prevention. It exhibits strong inhibitory effects against spoilage bacteria and mold, and its high water solubility contributes to its widespread application.
Its bacteriostatic action is more potent than its bactericidal effect, with antimicrobial potency increasing at lower pH levels.
Potassium sorbate effectively inhibits mold, yeast, and aerobic bacteria, while also preventing the growth and reproduction of harmful microorganisms such as Staphylococcus aureus, and Salmonella. However, it is nearly ineffective against beneficial microorganisms like anaerobic spore-forming bacteria and Lactobacillus acidophilus. Its inhibitory effect on development is stronger than its bactericidal action, thereby effectively extending food shelf life while preserving the original flavor.
Its preservative efficacy is 5 to 10 times greater than that of sodium benzoate, a comparable product.
